Along with gluten free bread recipes, I keep a long list of cookie recipes for our gluten free life. I adore peanut butter cookies and fell in love with this recipe after trying it the first time.
This is a VERY easy gluten free peanut butter cookie recipe. Four simple ingredients and two easy steps… mix and bake. Easy!
Gluten Free Peanut Butter Cookie Recipe
Gluten-Free Peanut Butter Cookies
Ingredients:
1 cup creamy peanut butter
1 cup of granulated sugar
1/4 teaspoon vanilla extract, optional
1 egg
Directions:
Preheat oven to 350 degrees. Blend all ingredients until smooth. Drop by the teaspoonful onto a cookie sheet. Use a fork to create a crisscross pattern. Sprinkle with extra sugar, if desired. Bake for 6 to 8 minutes, depending on oven. Cool. Makes 6 cookies.

I love to have cornbread with my chili or vegetable soup. With this gluten free bread recipe, I can! This is a very simple and great-tasting corn bread recipe that will suit your gluten free lifestyle.
In this corn bread recipe, it says that adding the sugar is ‘optional’. While some may prefer to not add the sugar to this gluten free bread, I have to admit that I DO add the sugar.
In my opinion, the added sugar gives the corn bread a nice, sweet flavor that is not too over-whelming.
I have also used this cornbread recipe to use in my gluten free stuffing. It works great!
Gluten-Free Corn Bread Recipe
Ingredients:
1 1/4 cup cornmeal
1/2 teaspoon salt
1/2 teaspoon baking soda
1/3 cup vegetable oil
1 1/4 cup gluten-free sour cream
1 cup creamed corn
2 large eggs
2 tablespoons granulated sugar, optional
Directions:
Preheat oven to 375 degrees. Mix all ingredients together until well blended. Pour into a 9-inch dark metal, square baking pan. Bake for 35 minutes or until edges have browned. Yield: 9 to 12 squares.
